Minneapolis, Kansas. One of the other two Minneapolis's but far from as cool. We passed through on Day 3 of our travels, which was Monday (Labor Day). We drove down Nebraska, through Kansas, with a stop in Oklahoma City. There we stayed with Summer's cousin, who kindly put us up for the night.
Day 4 began with Jason's Deli. It's hard to eat healthy on the road, but a delicious 10am breakfast/brunch salad bar at Jason's deli did the trick. Coming from a family that loves their salads/salad bars, ha, this one tops. Good selection of non-iceberg lettuces, pasta salads and all the toppings you can think of. Desert definitely included their free ice cream. From there we continued our journey south into Texas. And that's where the crazy weather began, to wear out an old pun, we weren't in Texas anymore...
